Living just round from this place was a treat, based on 4 Spittal St, Edinburgh. This is pure coffee autism at the highest form and I like it. This is the gentlemans/gentlewoman coffee shop, where everything is measured to precision. The menu is limited to flat whites, filter and drip coffee but the barista will bend to the attractive latte mum. You can be assured scales are used all through out the process to ensure the maximum extraction. A nice addition with being served water alongside a ceramic cup adds to the experience. If you have any questions regarding what type off coffee is for you or how to have your coffee the barista is open to chat, as the coffee shop is open plan. They also sell the beans they use, allowing you to take home a suvineer. If I remember correctly, they use a citrus flavoured coffee making the experience very refreshing. This experience paired with the castle just outside makes the whole experience very memorable.
Origin Coffee
Based just away from George Square is Origin Coffee. Anyone visiting from South England will potentially know of this company initially founded in Porthleven. They have mastered everything when it comes to running a trendy coffee shop. Based on South College Street, the exposed brock shop sits back as you walk in. Order at the counter and grab a table as soon as you can. If you can get a seat near the window you can watch the world go by. Whilst the coffee isn't weighed like source coffee, their baristas are certainly qualified, ensuring that every coffee is of their high standards. With their strengths being roasting coffee, you know the beans they are using are fresh and vary depending on availability.
Thomas J Walls Coffee
Fantastic coffee with a rich, smooth flavor that keeps me coming back. The café has a unique charm, set in what used to be an old optician’s shop. The mix of historic character and modern comfort makes it stand out. Thomas J Walls Coffee is easily one of the best spots in Edinburgh.

Please check these places out, whenever possible please try support local shops. One of the reasons Edinburgh is so fun to visit is due to all the local cafes and shops, the last thing it needs is another Starbucks.
